Citrus Olive Oil Cake

Citrus Olive Oil Cake
Serves 10

Delicious and good for you. This cake combines two healthful ingredients: yogurt and olive oil. You’ll love how the combination creates a delicate tart-sweetness.

1 cup plain yogurt
1 cup Tierra Callada Arbequina olive oil
2 cups granulated sugar
3 cups all purpose flour
3 large eggs
2 teaspoons baking powder
1 orange, juice and zest, plus more for garnish
Zest of 1 lime or lemon
Confectioners’ sugar

Preheat the oven to 350 degrees. Lightly oil a cake pan and dust with flour.
Combine all the ingredients in a large bowl. Using an electric hand mixer blend the ingredients until well combined and free of lumps. The dough is fairly dense.
Pour into the prepared pan and bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.  Top with confectioners’ sugar and slices of orange or zest.
